The key to the success of The Singing Waiters is the element of surprise. The performers are already amongst the guests posing as waiters pouring their wine and acting as hotel management during the food service. Marco the Italian waiter has been pouring wine at the tables, occasionally bursting into phrases from opera for the delighted guests. “In Italy, when we pour the wine, we sing!” he explains, in broken English.
